Easy Potatoes

This is a picture of potatoes I cooked last night. I have found an easier way to handle them when making things like potato salad or like last night augratin potatoes.

I just cook them whole, skins on. I wash them and throw them in the pot sometimes I don't wash them before but last night I did. For me this works well and it doesn't take any longer to cook them at least I haven't noticed.

For potato salad we prefer the skin off so after they cool the skins just peel off and I dice them up. Like last night I left the skins on and cooked them till they were almost done and then sliced them. These were left over and I froze them for another meal. You can see a little that the skins were peeling right off as I cut them up.

I have heard that this also keeps the vitamins of the potato so anything to help with that is a boon in my book.

I hope this tip is one that helps you and if you already do this I would like to know about it.

  2. If you use a potato ricer to make mashed potatos you don't have to peel either, the holes keep it from coming out.

  4. Great idea! I always leave the skins on: it's easier, we like them, and it's better for you. I bet they would be so much easier to peel after cooking, though.
