What do you do with an abundance of Tomatoes and peppers


You get your teenagers to help you chop them up and can them....

We tried a new salsa Monday and made 11 pints of it, tuesday we started on diced tomatoes.

Hot peppers I can in jars I have saved over the year. This one is a jar that was pickles we used at girls camp. I don't suggest you reuse jars like I have but it works for me and we have never had a problem. I only use them for the hot peppers and I only reuse it once.

Canning Hot Peppers
5 cups vinegar (5%)
1 cup water
4 tsp canning or pickling salt
2 tbsp sugar
2 cloves garlic

Heat to boiling and simmer for 10 minutes. Then remove garlic and discard. I have used garlic powder in a pinch when I have no cloves.

We usually wash the peppers cut them up and fill a pot with them then I mix this mixture up in the pot yesterday I had to make 2 batches of this to cover the peppers. I let it get to a boil and simmer till the peppers are cooked thru. And then start putting them in hot sterilized jars.

We still have an abundance from last year of banana peppers and jalopeno peppers so we only picked enough for a jar. Green peppers we chopped up and froze.
