Cook: Homemade Fresh Salsa

Last week I made enchiladas and while the kids and I were out walking our local track I kept thinking of fresh salsa not canned jarred stuff or the tomato sauce enchilada sauce I make I wanted fresh and cool out of the fridge. So when we left the track we went to a veggie stand near our house and picked up peppers, tomatoes, green onions, and a lemon. The peppers were 50 cents each even for the orange and yellow. I love them!

I chopped one tomato and half of each one of the 3 peppers then squeezed juice from half of the lemon (lime is better) over the chopped veggies. I added parsley (dried) fresh or cilantro is better, a touch of red pepper and kosher salt. Hubby brought a jalapeno pepper home for me to put in it and it was so good over dinner and on a breakfast casserole the next morning!

I would love to hear from anyone else who has a great recipe for fresh salsa these homegrown goodies will be a daily delight in just a few months!

  1. Erika, I love your blog! We used to have chickens in the most adorable hen house! They laid green, pink, and blue eggs!

Thanks for joining us today! I love salsa and I'm planning on getting a little chopper thingy to make it easier for me to have it all the time. We are starting our garden and I'm planning on lots of veggies!

I always buy red and yellow peppers when they're on sale!

  2. What a pretty salsa! I can't wait for all the local farmers markets to open so I can catch fresh veggies to make this!

  3. I am jealous of your fresh veggie market. Thanks for the recipe and linking up to Tempt My Tummy Tuesday.

  4. I make my own salsa often and I actually prefer it with parsley for some reason.

  5. I know Stephanie @ Keeper of the Home has a good one. I haven't actually tried to make my own yet though !

  6. I'm so jealous of your fresh fruit stand and your 50¢ peppers. Wow! Can't wait to get some colorful peppers growing in the garden this summer.
