Last week I made enchiladas and while the kids and I were out walking our local track I kept thinking of fresh salsa not canned jarred stuff or the tomato sauce enchilada sauce I make I wanted fresh and cool out of the fridge. So when we left the track we went to a veggie stand near our house and picked up peppers, tomatoes, green onions, and a lemon. The peppers were 50 cents each even for the orange and yellow. I love them!
I chopped one tomato and half of each one of the 3 peppers then squeezed juice from half of the lemon (lime is better) over the chopped veggies. I added parsley (dried) fresh or cilantro is better, a touch of red pepper and kosher salt. Hubby brought a jalapeno pepper home for me to put in it and it was so good over dinner and on a breakfast casserole the next morning!
I would love to hear from anyone else who has a great recipe for fresh salsa these homegrown goodies will be a daily delight in just a few months!

I always buy red and yellow peppers when they're on sale!
