Eggs:Day 4

Its Friday!....

And since Saturday is tomorrow and we don't do anything really special for breakfasts any other day of the week but Saturday I wanted to share what we do with eggs on this day.

You can make omelets, eggs in different ways, waffles, etc. But what we like is a breakfast cassarole. I cook potatoes the day before and dice them I cook them in several different ways. Or I use hashbrowns. In the morning I will put a layer of potatoes with cooked ground sausage, or crumbled bacon, sauteed green peppers and onions, maybe some diced tomatoes anything you would put in an omelet layer it on. The number of eggs you need depends on the amount of filling you have and of course the number of eggs on hand. Pour the beaten eggs over your filler and top with cheese. Bake at 350 the length of time depends on the thickness but about 30 minutes. When your fork comes out clean than it is done.

We really like this breakfast leftovers freeze great for during the week breakfasts for hubby. So I usually make a big cassarole dish so we can freeze leftovers. It makes a great dinner as well.

Another way to use eggs which I haven't tried but saw the recipe this morning in a sugar free cookbook I have is Eggnog. I love eggnog from the store but never have made it. So I thought I would add it to this weeks egg recipes.

Eggnog
1 cup milk
1tsp vanilla
1 pinch salt
dash nutmeg
1 egg
1 tbsp orange juice concentrate
1/8 cinnamon
Blend in a blender enjoy! This is a sugar free recipe
