A couple weeks ago I came across this cake that looked really good. It was made with 100% whole wheat and it was Choc. I found it here and the original recipe is here as well. But I wanted to change it a little since I didn't like the nutmeg and cinnamon. And I wanted to convert it to sugarfree. So here are the changes I made basically omitting the nutmeg and cinnamon and then a sugarfree version. The picture does not do it justice. We made a bday cake for dad the same day so we used some of the coconut icing on it. It was good.
1 1/2 c whole wheat flour. I used red wheat experiment with what you have
3/4 sugar
1/2 butter or coconut oil or combination I use smart balance
1-3 Tbsp cocoa I used 3
3/4 tsp baking soda
dash of cinnamon not much
1/2 tsp of baking powder
dash of salt
hand full of choc chips
1 c buttermilk
I followed the soaking method the first time and I liked the results but needed to add a tad more buttermilk in the morning after the flour soaked to help wet it all down some
In a large bowl combine flour sugar and butter until crumbly. Add cocoa, cinnamon, baking soda, baking powder, salt and mix well. Add butter milk and choc chips mix well and transfer to 8x8 baking pan and bake for 30 to 35 minutes.
For sugar free I used agave nector
3/4 c agave nector instead of sugar
up baking soda to 1 tsp instead of 3/4 tsp
and use sugarfree choc chips or leave out.
We have enjoyed this and it is small enough that there isn't a bunch to find a place for :0) it is best the day of the baking. Sugar free cool whip would be nice on this or your fav icing. And you get a whole wheat instead of the processed stuff I think this is perfect replacement for when a cake is needed. Now to find a vanilla cake made with wheat flour!
