1 thing to do with an overabundance of Squash...

Last night for dinner I was going to make stuffed zucchini but instead made a mixture of stuff that was really good and will be a dish I make again.
I had zukes, white scallop squash, acorn squash, tomatoes, and sausage. I cooked the the sausage up, chopped up all the squash taking the skins off the acorn and scallop. And tossed it all in the crock pot. Then I added italian seasoning, pepper, garlic, and a can of diced tomatoes as well as 1/2 pint of homemade pizza sauce I just opened to make mini pizzas for lunch.

I then cooked it on high for 4 hours or so. We went swimming so I am not sure how long :0) When we got home I made some garlic pasta, cooked up the green beans we picked yesterday, and we had a great and filling dinner. It tasted so good and most of it was grown by us! That right there makes the meal the best.

  1. I love veggie lasagna in the crockpot. Cut up the squash for the lasagna :)

  4. I love meals like this. And I am super jealous of your patty pan squash (white squash) thats what we call it here in texas. I love to add squash to a variety of meals!
