Nourishing Baked Oatmeal


This morning we had Baked oatmeal but I wanted to leave out the sugar and while I was at it I wanted to soak the oats as well. This is what we came up with and it was really and I mean really good and easy. Since we are changing how we eat to provide ourselves with nourishing foods we wanted to change how we're doing things. It is going slowly and we are learning alot I am starting with dairy things and breakfast and will move slowly as I run out of things in the cupboard and replacing them with nourishing items.

I cut the recipe in half since I wasn't sure we would like it and I didn't want to have alot left over.

Here it is before changes and not halved.

1 c oil
1 1/2 c sugar
4 eggs
6 cups oats
4 tsp baking powder
1tsp salt
1 tsp cinnamon
2 cups milk


combine all ingredients in order listed. Pour into greased 9x13 pan and bake at 375 for 30 to 40 minutes. Can be refrigerated overnight before baking.


Here is the the recipe changed. Now it is halved you will have to double for a 9x13 pan of it like above.


Day before 12 to 24 hours before. I have been planning the next days breakfast while I am making breakfast the day before. Grind any grains that need to be done soaking any that need it etc. Anyway 3 cups rolled oats and 1 c buttermilk mix, cover, and let soak on the counter.


The next morning add to above mixture
1/2 c oil ( I think this can be changed to coconut oil or butter but I didn't try that...yet)
3/4 agave or honey
2 eggs
2 tsp baking powder
1/2 tsp sea salt
1/2 tsp cinnamon
combine them all I added dried apples that the kids did a few weeks ago. Handsome said nuts would taste good in it and raisins. So next time..... Bake at 375 for 30 minutes.
This was very good and just a little was very filling. We topped ours with fresh strawberries and homemade yogurt I made yesterday. Ash added milk and a spoon full of yogurt.
Handsome has noticed that soaking the whole grains helps his tummy. Usually whole wheat products, homemade granola etc bother his stomach the rest of the day and soaking is helping with that.
Also making that effort to get up early and eat together at the table as a family for more that just dinner is making a difference as well. Yes the changes have only been going on for a about 2 weeks in just that short time we all see a difference.

  2. My son loves this dish but I have never tried to make it with honey. Looks good.

  3. delicious. you can replace the oil with applesauce -- it's delicious too.
