Lemon Sponge Cake

Yesterday, I made this for family home evening it was very good and easy to make. I didn't get this recipe from the Amish Cook's Baking Book, but I did get it from a Wanda Brunstetter book and she writes fiction books about the Amish. :0)
Lemon Sponge Cake from Going Home by Wanda Brunstetter

1 c sifted cake flour (I used regular flour)
1 tsp baking powder
1/2 tsp salt
1/2 cold water
2 tsp grated lemon rind
2 egg yolks, beaten
3/4 c plus 2 tbsp sugar
2 egg whites, beaten
1 tsp lemon juice

Preheat oven to 350. Sift the flour, baking powder, and slt together four times. In a separate bowl, add water and lemon rind to the egg yokes and beat them until they are lemon colored. Add 3/4 c of sugar a little at a time, beating after each addition. Then add the sifted ingredients, slowly stirring to blend them in. In a separate bowl, bet the eggs whites until they form peaks, then add the lemon juice and 2 tablespoons of sugar, beating until they are well blended. Fold this mixture into the rest of the batter, and pour into an ungreased tube pan. Bake for 1 hour. Remove from oven. Cool thoroughly and then remove from pan.

This was a very delicious cake and easy to make. It would be lovely in little bundt pans to make little cakes. The cake itself is not very big and so makes a small light dessert. I would like to try it with fresh ground wheat and raw sugar.
