Crispy Pumpkin Seeds

My mom gave Wyatt some pumpkins that were leftover from decorations. They were all nice looking but he wanted the seeds from the heirloom ones. I asked him to save the seeds from the regular ones so I could try roasting them.

I have thought of about them, but that is as far as I have gotten. I hadn't even gotten to wanting to try them, but here we were with free seeds to try and so I jumped.

Of course I wanted them soaked so for more nutrition and I found the perfect directions here. After you soak them for 24 hours in salted water you spread them out on a cookie sheet to dry. I figure it is so you aren't steaming them, but roasting them when you finally pop them in the oven.

Below wet just out the the water.
Once they are dry I coated them with olive oil and Himalayan sea salt, I love the taste and soft pinkness of this salt.  And put them in a 300 degree oven, they didn't take long I don't think, but I didn't time them.

I think they would be good with some flavor like garlic salt or cayenne pepper maybe chili powder. But they were good plain too.
