How to make Mayonaise.

It is actually cheaper to buy storebought mayo but I ran out and driving to town etc etc. So I made it and thought I would share. I used to make it all the time with homegrown eggs but have gotten out of the habit. I needed to make potato salad for a cookout and I really thought it would fun to show you how to do it.

You will need:
* blender or stick blender-- astick blender is easier since you can make it right in the jar you'll later put it in
*2 eggs
*1 1/2 tsp salt
*1 tsp dry mustard
*1/2 tsp paprika

Whirl these items in your blender. Don't add to much paprika....I did for this batch:0)
After you have whirled it around scrape down the sides and add 2 Tbsp lemon juice. Start blender and take the cover off slowly pour in a 1/2 c salad oil. Then add 2 Tbsp vinegar. Slowly with blender running add 1 1/2 salad oil. It will get thick and this is where using a stick blender works better you can move it around some in the jar to really mix it well.
This is the finished product. I double the batch so you won't get this much in yours and remember don't add to much paprika you'll end up with orange mayo like mine :0) Now, your mayo won't be white either since the egg yolks make it more yellow or orange depending on if you use storebought eggs or farm fresh.

I hope you liked this little tutorial on making your own mayo.
