Black Bean Sloppy Joes

Today, is the actual first day of girls camp I have spent the last 2 days prepping, shopping, washing laundry etc. I will be back Monday with some pictures of camp and Ash and I will be painting my room, picking our years worth of peppers and tomatoes, and just being girls since the boys will be roughing it at scout camp (Cave Man Heaven)

Black Bean Sloppy Joes is something that was an experiment that turned into and awesome meal. We loved it. I started calling them Beanie Joes but whatever you call them they are good. And a cheap meal since most of the ingredients you probably will have on hand and there is little meat.

when I made this I threw it all together. I don't measure things out I just throw it in so bear with me on this as I try to use measurements for you.

1 1/2 cup black beans soaked overnight.
1 lb stew meat cut up small

Cook the beans on the stove top until the skins split when blown on. Then saute the meat with salt pepper and worcheshire sauce until done.

After these items are cooked mix together. I then add 1 to 2 cups ketchup, 1 to 2 tbsps mustard, worcheshire sauce, red wine vinegar, garlic powder, onion powder, and a little molassas to taste. Now this is my BBQ sauce that has been modified for sloppy joes. The amount of the first 2 items depends on how saucy you want your joes. The rest of the ingredients depends on your taste.

You then let it set on low for maybe 10 minutes to mingle the flavors. I love black beans they can be used in anything and don't have a strong flavor they seem to take on other flavors very well.

I would add diced up green peppers and onions but I have a teen who doesn't like those items so I don't add them to often.  The picture above was on 100% whole wheat bread I  make for myself.
The rest of the family prefer homemade white.
