From Sue Greggs Book....Breakfasts
1 lb ground turkey (I used ground pork above)
1/2 tsp nutmeg
1/2 tsp sage
1/2 tsp thyme
1/8 tsp cayenne pepper
1 tsp cayenne pepper
1 tsp salt
The best way to mix this is in a kitchen aid mixer if you have one. It will blend all the spices beautifully. If you don't have one mix it by hand and then form into patties and fry as you would your sausage. Or freeze it for later use.
We liked this alot and I love that I know what has gone into it unlike the prepackaged stuff in the store. It would be even better if the pork or turkey was homegrown.
