Delightful Salad

We had a linger longer Sunday at church and Ashley made a wonderfully, delicious salad, and we wanted to share it with you.

We didn't get a picture but we did get a healthy dose of vitamins from it. We are going to have the ingredients and dressing in the fridge and when we want to have it for lunch or a side dish mix up what we want.

It is extremely delicious and easy to make.

Broccoli  Salad

8 slices of bacon cooked you can use bacon bits
2 heads of fresh broccoli, chopped
1 1/2 c sharp cheddar cheese
1/2 large red onion
1/4 c red wine vinegar
1/8 c white sugar----raw sugar would be best I am going to try stevia sometime
2 tsp salt
2 tsp ground pepper
2/3 c mayo
1 tsp fresh lemon juice

Cook bacon if you haven't already and crumble

In large bowl, combine broccoli, cheese, bacon, and onion

Prepare dressing in a small bowl by whisking together red wine vinegar, sugar, pepper, salt, mayo, and lemon juice. Combine dressing with salad. Cover and refrigerate until ready to serve.

Our recommendations mix up, cool for a couple of hours and then eat. Try to eat it the same day it is much better, it is not a recipe that is better the next day. It is still good but the best is the day it is mixed, that is why I will keep it all separated and mix up as we want it. I think mixing the dressing up ahead of time would be fine.
