Plain and Simple

at the cottage....

We have been busy, scout camp was last week and I did post a Plain and Simple, but it was lost in blog sphere. And it was just a small thing saying sorry busy not Plain and Simple this week. :0)

Below is the kids swimming, we went and visited the camp last week and Ash and Yguy went swimming as well as the dogs.

Mary had a blast running around in the water and splashing around. She and our other dog slept very soundly that night.

The living room in disarray while we painted....

Pastured turkeys and ducks they love running around after bugs and things. So much fun for them and fun to watch.

The living room is rearranged and painted a nice sage green with stenciling as a border.

Of course we had to put our branch back up with our little nature treasures we have found. A little nest with a real egg shell in it, pinecones, fabric birds, acorns, feathers, etc.

The boys brought me this beautiful nest that fell into the truck bed during a storm at camp. Yguy added the small pinecones and I put in my collection of cones. I love the look of it.

The rest and relax where ever you fall would be so nice.  He didn't even move when I vaccummed. Hes just a little spoiled.

We have been canning, sewing, visiting, enjoying the early mornings and evenings. The daytime is so hot, but we have gotten rain and that is lovely.

Ash and I enjoyed out week just us last week and the boys enjoyed their time together, but now its time for some normalcy after a month of hectic. Youth conference is next and I will not be going this year, but both children will be, so we will be going to a wedding and the temple.

I wanted to post a recipe that I did a class on at girls camp. It was enjoyed so much and is so easy to make.

Herb Foccacia

2 3/4 cups flour

1 teaspoon sugar

1 teaspoon salt

2 1/2 teaspoons dry yeast

1 large garlic, minced

3/4 teaspoons dried rosemary

1 1/2 teaspoons Italian Seasoning (or 1/2 t each oregano, thyme, and basil)

1 Tablespoon olive oil

1 cup warm water

In the bowl of a mixer, combine all ingredients with the dough hook attachment. Mix at medium speed for about 5 minutes or until dough is smooth and has pulled away from sides of bowl. Remove dough hook, cover bowl with plastic wrap, and allow dough to rise 30 minutes.

Deflate dough and allow to rest 5 minutes. Spread dough out by hand on an oiled baking sheet into roughly 8" x 10" rectangle. Use your knuckle to make indentations on dough every 1/2-inch. Lightly brush dough's surface with olive oil and bake in a 425 degree oven for 15-20 minutes or until golden brown.

1 Tablespoon olive oil

1/2 teaspoon kosher salt

Stir together olive oil and salt and brush over the surface of hot bread. Serve immediately.

I feel you could use wheat instead of white flour, but we used a 50lb bag of white flour for many from stratch things at camp and this was one of them.

It is so easy to make and the girls loved that they made something to go with their dinner that night.

I hope you have a wonderful week.

Love,

Erika
